The Ultimate Comfort Side Dish: Tomato Thokku
This 10-minute Tomato Thokku is an absolute lifesaver in my kitchen. The aroma of tomatoes and garlic cooking down in oil always takes me back to those evenings cooking alongside my mom, watching her balance the spices perfectly.
These days, whenever my partner Surya and I want a comforting, flavorful meal but don’t have the energy for a massive cooking session, this is my ultimate go-to side dish. It is tangy, spicy, and requires only basic pantry staples. I recently made a fresh batch and decided to snap some photos of the process so I could share my exact method with you all.
Why you will love this recipe:
It is incredibly versatile! You can mix it with hot white rice, use it as a side for idli or dosa, or even spread it on chapati like a spicy jam. Plus, if you make a slightly larger batch, it stays fresh in the fridge for a few days, making it perfect for quick weekday dinners.

- Cook time: 20 minutes
- Serves: 3 to 4
- Course: Side Dish / Relish
What you will need (Ingredients):
- 3 to 4 large, ripe Tomatoes (finely chopped)
- 2 medium Onions (finely chopped)
- 4 to 5 cloves of Garlic (peeled and roughly crushed or chopped)
- 1/2 teaspoon Turmeric powder (Manjal thool)
- 1.5 teaspoons Red Chili powder (Adjust based on how spicy you like it)
- 2 tablespoons Cooking oil (Gingelly oil/Nallennai gives the best flavor)
- 1/2 teaspoon Mustard seeds
- A sprig of fresh Curry leaves
- Salt to taste
- A little water to adjust consistency

Steps to make the Tomato Thokku:
1. The Prep Work:
The key to a good tomato thokku is chopping your onions and tomatoes as finely as possible. It helps them melt down into a rich, thick paste. Also, keep your garlic ready-crushing it lightly releases maximum flavor.
2. The Tempering (Thalippu):
Heat a pan with oil on a medium flame. Once the oil is hot, drop in the mustard seeds and let them splutter. Add the fresh curry leaves and the crushed garlic. Saute the garlic for about 30 seconds until it releases its beautiful aroma, taking care not to burn it.
3. Sauteing the Onions:
Add the finely chopped onions to the pan. Saute them patiently until they turn soft and slightly golden. This step is crucial because nicely cooked onions give a subtle sweetness to balance the tanginess of the tomatoes.
4. Adding the Spices:
Now, lower the flame completely and add the turmeric powder and red chili powder directly into the oil and onions. Give it a quick mix for about 10 seconds. Doing this gives the tomato thokku an intense, deep red color.
5. Cooking the Tomatoes:
Immediately add the chopped tomatoes and salt. Mix everything well. The salt will help the tomatoes break down faster. Cover the pan with a lid and let it cook for about 5 minutes until the tomatoes become mushy.
6. Adding Water and Boiling (The Simmer):
Once the tomatoes have broken down into a paste, pour in a little water to adjust the consistency. Don’t add too much; just enough to let the gravy boil. Stir it well and let the thokku boil vigorously for a few minutes.
7. Waiting for the Oil to Separate:
After it boils, reduce the heat and let it simmer. The most satisfying part of this recipe is watching it thicken. You will know the tomato thokku is perfectly done when it comes together as a thick, glossy mass and the oil starts leaving the sides of the pan. Turn off the stove!
Quick Tips from My Kitchen:
- Use ripe tomatoes: Country tomatoes (Naattu Thakkali) work best for this recipe because they have a natural sourness that tastes amazing.
- Patience is key: Let the tomato thokku cook down on a medium-low flame. The longer it simmers and reduces, the better it tastes.
- Extra oil: Tomato thokku generally requires slightly more oil than normal curries, as the oil acts as a natural preservative and enhances the taste.
Storage and Travel Tips (How to store):
To make it last for 10-15 days, always use a dry, clean spoon and store it in an airtight glass jar in the fridge. Because we use extra oil, it acts as a natural preservative, making it the perfect side dish for long train journeys or road trips!”
Tasty Variations (Customizations):
Add a tiny piece of Jaggery (Vellam) at the very end. It won’t make the thokku sweet, but it beautifully balances the extreme sourness of country tomatoes and the heat of the chili powder.
