Masala Makhana Recipe: Healthy Evening Snack in 10 Minutes
Masala makhana is my favorite go-to snack whenever I crave something crunchy but don’t feel like cooking. It requires only a few ingredients found in every kitchen and takes around 10 minutes to prepare.
The makhana or fox nut is light and gets crispy when roasted. It also absorbs masala really well. For this masala makhana recipe, I am using only oil, turmeric, garam masala, chaat masala and salt for flavor. You simply need a packet of makhana in your kitchen for this.
Why you’ll love this masala makhana
When evening tea time comes around, I always want something crunchy on the side. Instead of getting a packet of chips, I make this. There is no deep frying and it uses only a pan and some oil, and it’s ready in about 10 minutes from start to finish.
It is also good for kids’ snack boxes, and you can adjust the spice level to suit everyone’s preferences at home.
Masala makhana recipe at a glance
- Prep time: 2 minutes
- Cook time: 2-3 minutes
- Serves: 2
- Course: Snack
Ingredients
- 1 cup makhana (fox nut)
- 1 tablespoon oil (you can use ghee too to roast)
- 1/4 teaspoon turmeric powder (manjal thool)
- 1/2 teaspoon chaat masala
- 1/4 teaspoon garam masala
- Salt to taste

How to make masala makhana
- Heat the oil. Take a heavy-bottomed pan or kadai and heat oil on low flame
- Add the masala. Add turmeric, salt, garam masala, chaat masala, then add the makhana within 15 seconds so the masala doesn’t burn. Mix well
- Roast on low flame. Stir continuously for 2-3 minutes on low flame. Make sure to keep the flame low throughout otherwise they will burn
- Check if it is crispy. Take a piece out and press between your fingers, if it breaks with a crunch, it is ready. If not, roast for a couple more minutes
- Toss. Toss well So the masala coats evenly
- Cool down. Cool it down for 5 minutes before serving, so that it turns out crispier
Tips for perfect crispy makhana
- Always use low flame while roasting. High flame browns the outside while the inside remains under cooked and mushy
- Make sure to cool the makhana to room temperature before storing in a box. Storing it warm makes it soft
- You can store it in an airtight container to keep it fresh for 4-5 days
- Taste and add a little extra masala at the end if needed
What I learned the first time I made this
The first time I made this, I kept the flame on high and roasted it for too long. The makhana turned brown on the outside, and a few pieces burnt completely. Once I switched to a low flame and watched the timing, it came out light and crunchy. So here’s a tip from experience: don’t rush the roasting.
Variations to try
- You can add a pinch of black pepper to it for some zing
- You can also add red chilli powder if you love spicy foods
- Try using ghee instead of oil for extra flavor
- A dash of amchur powder (dry mango powder) adds a tangy twist
What to serve it with
Masala makhana pairs well with tea or filter coffee in the evening. It also makes a good substitute for popcorn while watching a movie, and it travels well in a snack box. I like it with a cup of tea after work.
